Birthday Weekend Recap

I’m currently en route to New York City to meet up with my mentor (who works at a huge magazine!) and an editorial assistant for another magazine. I’m beyond excited!

Anyway, how was your weekend? Mine was fabulous. It just so happened to be my 22nd birthday yesterday, so that made it all the more exciting.

IMG_9121

I’m back today with another weekend recap, or in this case, Wednesday through Sunday (since I’m still on Christmas break). But, before we get to the birthday fun, let’s rewind to the middle of last week.

We took down all the decorations last weekend (my least favorite day), so when I put my feet up in the living room to do some blog work on Tuesday night, instead of the gorgeous tree, this was my boring view. 😦 Raise your hand if you feel the post-holiday blues!

Wednesday

My mom and I love to go to the outlets whenever I’m home for a break, so Wednesday morning we took the hour and a half drive for a day of shopping and girl time. It was the best!

There were still a lot of great deals, so we made some awesome purchases.

At J.Crew, I got the two tanks you see in the following picture, as well as a cute ceramic tumbler (in the picture with the purses and shoes). Love!

IMG_9004

After J.Crew, I got this pair of black Vans sneakers and these Nike Free Flyknits, both of which I’m obsessed with!

IMG_9059

I had trouble deciding between the Flyknits and these black Frees, but I went with the purple ones just because they’re wicked comfortable. Black Nikes are next on my list. 😉

IMG_9020 IMG_9021

Because it was such an amazing price, I also got this Coach purse. I may end up returning it if I decide to splurge on a Tory Burch bag that is similar, but one I’ve been eyeing for years. We shall see.

IMG_9034

I tried these cute slip-on sneaks at Gap (that were only $15!), but they were a little big and they didn’t have any in a smaller size. Oh well, at least I got the black Vans I’ve wanted for months!

FullSizeRender (17)

Here are some more purchases/ late Christmas gifts! I love the Tory Burch flats my parents gave me, as well as the Kate Spade bag.

Screen Shot 2016-01-14 at 12.53.44 AM

I feel very fortunate to have received (and also to have been able to buy with my own money) many amazing things. However, in the world of fashion blogging, and all of social media in general, it can be easy to get caught up in material items. But, it’s important to take time each day to think about the things that matter most and thank God for all we have. Our family, friends, health, and happiness are truly our greatest blessings. I never want to lose sight of that.

For lunch, I had one of my fave things at the outlet food court – a whole wheat wrap with chicken, lettuce, walnuts, granny smith apples, and balsamic vinaigrette. Yum!

IMG_9103

We finished shopping around 5, and when we arrived home around 6:30, I had a very exciting package waiting for me! My mom had ordered this coat for me after Christmas because she wanted to get me a nice jacket for next year when I’m in the working world ((AHH!)), but she wanted me to choose it. Luckily it fits perfectly and is exactly what I wanted. In fact, I’m breaking it in today!

Screen Shot 2016-01-10 at 11.17.57 PM

Screen Shot 2016-01-14 at 12.52.03 AM

After I tried on the coat and did a little dance because it fit and I can now stop shopping/searching online for a coat I like, my mom asked if I wanted to go out to dinner. My dad was out to eat with some college friends, so it was just the two of us, and she didn’t feel like starting to cook so late. So, we went to an awesome organic, locally grown ingredient pizza restaurant since my mom had never been. My mom is also 5-foot-2 and tiny, but we both can eat, so we split this pizza and ate every last bite.

It was such a fun mother-daughter bonding day and night. I’m so lucky!

Thursday

I did my usual workout, eat, apply to jobs, eat, hang out, repeat, and finally got around to touching up my nails, before heading to a friend’s house that night.

IMG_9011

Friday

On Friday morning I woke up early for a run, and then I had a physical (woohoo), which went well. After my appointment, I went to the Vitamin Shoppe for more Quest bars because I’m obsessed. This time, I got another box of Cinnamon Roll (my fave), and then a few Vanilla Almond, and S’mores to try. I love them allllll.

IMG_9118

Then, I did some camera shopping. I’ve been wanting a nice camera (simpler and cheaper than a DSLR, but a bit fancier than a small point and shoot), and I’ve been doing tons of research and comparing different cameras. I’ve narrowed it down to two, so we’ll see if I pull the trigger and buy it this week!

IMG_9077 IMG_9078

That night, we got takeout from Panera. I haven’t eaten there since the summer, which is not okay with me. I’m glad I changed that ;).

I got the “You Pick Two” BBQ Chicken Salad (without frizzled onions), and the vegetable soup, plus bread on the side for soaking up every last morsel. So good!

Saturday

After a good workout, I spent the early afternoon baking with my mom and visiting with some family who stopped by. I made (super easy) pumpkin spice cupcakes – recipe to come!

IMG_9112

After we went to mass, two of my brothers and one of their girlfriends met us to go to my grandma’s house for dinner and a little birthday celebration.

It was a great night! For the past three years of college, I’ve gone back to school right around (or on) my birthday, so it’s nice to have a full week to relax and enjoy down time, family, and high school friends before my final semester of college begins. Plus, three of my five roommates (in addition to me!) also had birthdays over break, so we’ll be having a quadruple bday bash in a couple weeks, which is something fun to look forward to!

Sunday

I woke up to many texts, emails, and Facebook posts from friends and family, which is definitely the best thing to wake up to ;). It was a rainy day, so I stayed in bed for a while responding to people and relaxing. It was the perfect lazy Sunday morning!

I ended up getting out of bed around 10:30, and was greeted by my parents with hugs, the kindest words, and a little present. Seriously, they (along with my brothers, relatives, and friends) are the best gift I’ve ever gotten and ever will get. I’ve said it so much in this post, but I’m such a lucky girl!

After lounging around, sipping coffee, and talking, I laced up my running shoes and went down to the treadmill for another 8 mile run.

Once I was stretched, showered, changed, and refueled, my mom and I ran some errands. We got back around 5 and I ate a snack and packed my bag, laid out an outfit, and planned today’s NYC trip.

The next thing I knew, it was time for dinner with the fam! We went to a local Italian restaurant (the same place we went last year on January 9th since I went back to school on my actual birthday). I got the seared sea scallops, which had bacon-braised kale, celery root puree, and granny smith apple mostarda. It was incredible, and I used two pieces of their fresh, warm flatbread to “lick” my plate clean in a socially acceptable way ;). We all loved our meals and had a great time reminiscing and laughing.

IMG_9126.JPG

It was an amazing weekend and a great twenty-second birthday. I hope your weekend was a great one, and that your week is off to an awesome start.

“I don’t now about you, but I’m feelin’ 22!” 😉

Thanks for reading! And thanks to AmandaKatie, and Erin for hosting their link ups, as always!

A Weekend Full of (Foodie) Favorites

HAPPY NEW YEAR!!

I can’t believe it’s 2016. This is the year I graduate college! <- That is crazy.

Anyway, I hope you had a great New Year’s Eve and holiday weekend!

I’m coming at you today with a recap of my year so far. 😉

New Year’s Eve

On Thursday, I went out to dinner with a big group of high school friends, and then we got drinks and watched the ball drop. It was a blast getting to catch up with people I haven’t seen since the summer and to have a little “night out on the town.”

Screen Shot 2016-01-03 at 11.15.45 PM

For dinner, I had a turkey sandwich with roasted peppers, spinach, and pineapple mango salsa. The thick whole grain bread was amazing, and it definitely hit the spot.

FullSizeRender (14)

We had wine with dinner and then went to a couple different restaurant/bars for drinks. At one stop I had a gin drink with cucumber, mint, mango nectar, and lime juice. It was so pretty I just had to take a picture. Yes, it was just as cool and refreshing as it looks!

IMG_8808

After we watched the ball drop, a few of us took an uber back to my house where we stayed up until 5:30 catching up, reminiscing, and talking about all that’s to come in 2016 and the future. It was an absolute blast and a night I will never forget.

New Year’s Day

I woke up around 10, so I felt exhausted for pretty much all of Friday. I had no energy to go for a run, so after sipping a smoothie (recipe on Instagram!) while lounging around and catching up with my family, I decided to do 20 minutes of light exercise just to move my body a bit. I chose six Blogilates turbo (3-5 minute) videos. Even though they weren’t sweaty cardio workouts, I definitely felt the burn in each one of them – which was just what I wanted!

Screen Shot 2016-01-03 at 11.13.35 PM

After my quick workout, I had one of my favorite snacks as of lately – Kind oat clusters and Almond Breeze unsweetened vanilla almond milk! So simple, but so yummy.

Screen Shot 2016-01-03 at 11.16.14 PM

We went to my grandma’s for dinner, which was so nice. I love my family. I didn’t take any pictures, but I had my new favorite (Carribbean Chicken & Spaghetti Squash bowl, Chipotle Pumpkin soup, and, of course, multigrain flatbread!) from my old favorite take-out restaurant, Cosi.

Screen Shot 2016-01-03 at 11.50.23 PMScreen Shot 2016-01-03 at 11.50.36 PM

Saturday

After a good sweaty run and arm/core workout, I showered up and went to the mall with one of my friends. I had just gone there last week with my mom, so this time I just got a scarf and shirt from Forever 21. My friend got tons of things she needed, and I had a blast helping her find everything she was looking for! I also got my favorite smoothie from Surf City Squeeze – the Blueberry Spinach Cucumber. Looove it.

IMG_8774

Around 6:30, my friend asked if I wanted to go to dinner at… where else? COSI. I said YES because I never mind having it multiple nights in a row. In fact I would eat it every day if I could. This time, I had another one of my faves – the Smart Fit salad and multigrain flatbread. It has kale, romaine, sweet potatoes, corn, black beans, roasted red peppers, carrots, scallions, chipotle lime dressing, and tons of avocado. It’s amazing.

IMG_8887

After dinner, I headed out for ice cream with a couple other friends. I had mint soft-serve with chocolate sprinkles. Simple and delicious!

FullSizeRender (15)

Then we met up with a bunch of other high school friends at a local bar afterwards. Since some of us had just eaten ice cream, we didn’t want anything to drink, so we just sat around our friends’ table and talked with them for hours. I got home just before 2:00, but it was so worth another late night.

Sunday

I woke up yesterday feeling surprisingly energetic, so after fueling with a cinnamon roll Quest bar (my favorite flavor!), I decided to do a long(ish) run for my workout. It was about 30 degrees outside, so I headed down to the treadmill, as I have most days lately. Gotta love the winter.

FullSizeRender (16)

After my run, I did my usual stretching/rolling/refueling/showering, and then headed to Target with my mom. Love that place.

I tried on some cute workout leggings, and got a bunch of Champion sport bras (on sale!!), food, and toiletry products that I’ve been needing.

I didn’t end up getting these shorts, but I thought they were super cute for spring/summer/warm fall days. Clearly I like maroon…

IMG_8898

Aren’t these leggings fun?

IMG_8901IMG_8902

I’m so excited to try these Bioré charcoal products!

IMG_8908

I’ve had naked nails since before Christmas, which I hate because 1) I pretty much always have painted nails and 2) I love all my festive/wintery colors. I don’t know why I’ve neglected my nails this break, but it’s time to give myself a manicure! These new colors are my motivation. I’m thinking the Essie “Petal Pushers” for my fingernails and the pink Sally Hansen for my toes!

IMG_8909

Later on, my family and I went out to dinner to one of my favorite (are you sick of me saying that word yet? 😉 ) restaurants where I got my fave wrap and sweet potato fries.

IMG_8911

After dinner, I relaxed, ate some leftover Christmas desserts, read my favorite Instagram guide, and caught up on some of my favorite YouTube vlogs. It was the perfect low-key end to a fantastic weekend full of friends, family, food, and fun.

IMG_8681

I hope you’re having a “marvelous Monday“, and that you have a great week ahead!

Thanks for reading 🙂

And as always, thanks to AmandaErinKatie, and Heather for hosting their link-ups!

Easy No-Bake White Chocolate Golden Oreo Truffles + Some Thursday Thoughts

As I promised, today I’m sharing a delicious recipe that’s perfect for a New Year’s Eve party, or any day of the (new!) year.

I made these bad boys for our Christmas Eve party, and my family loved them. They’re decadent and delicious and I made sure to make plenty so we also had more than enough for Christmas and a few other family parties last weekend.

Like I said, there are tons of recipes for these (all you have to do is Google “Oreo truffles” and you’ll come across pages of different varieties!), but I put my own little spin on them based loosely off of this recipe.

My mom gets migraines from chocolate (I know, it’s super sad for her, too), so I wanted to make a dessert that she could enjoy. This led me to… White Chocolate Golden Oreo Truffles. Yum.

IMG_8681

The recipe actually makes about 4 dozen one-inch truffles, but this photo is a serving dish I brought to my aunt’s house on Christmas Eve. We also made a few with butterscotch coating because my mom loves it.

Besides being simple (and super yummy), the fun thing about this recipe is that you can change up any of the flavors depending on what you like or the occasion you’re making them for!

You can use any type of “chocolate” (white, dark, milk, or any other bars or chips like butterscotch, peanut butter, caramel, cinnamon… whatever floats your boat!). You can also use any kind of Oreo (regular chocolate, specialty flavors, limited editions, etc. When I went to the store to get the ingredients, I discovered that there are way more flavors out now than when I was growing up. I was overwhelmed by the options!). Whatever you choose, they’re guaranteed to be delicious!

Okay enough talk – let’s get to the good stuff!

EASY NO-BAKE WHITE CHOCOLATE GOLDEN OREO TRUFFLES

A simple no-bake dessert you can whip up for any occasion that is sure to please all your guests! (Or just to make for yourself, because trust me, once you try one, you’ll be craving these every. single. day.)   😉

Recipe by Laura of LaurRuns.wordpress.com

Servings: 48 one-inch truffles

Prep time: 30 minutes + 1 hour in the fridge

Ingredients:

  • 1 (8 oz.) package of cream cheese, softened (can sub for low fat if you wish)
  • 1 package (or about 36 cookies) golden Oreos (can sub for any flavor)
  • 4 (4 oz.) packages white chocolate baking chocolate (can sub for any flavor) *
  • Optional: sprinkles, peppermint, chocolate shavings, coconut, etc. for topping

*You can use baking chips, but they do not melt as well as baking bars

FullSizeRender (12)

Instructions:

  • Take cream cheese out in advance so it’s softened by the time you’re ready to start
  • Crush Oreos (in food processor or in a sealed bag using rolling pin/your hands)
  • In a mixing bowl, mix cream cheese and finely crushed Oreo crumbs until there are no chunks of cream cheese, and everything is well blended
  • Form the dough into (about 48) one-inch balls
  • Melt chocolate in double boiler or in the microwave, stirring every 30 seconds so it doesn’t burn on the bottom of the bowl
  • Carefully dip each ball into melted chocolate
  • Place truffles (with enough room in between so they do not touch) on cookie sheet that has been covered in parchment paper
  • Optional: Sprinkle with toppings
  • Refrigerate for 1 hour or until firm
  • ENJOY!

*They can be refrigerated in a tightly covered container for however long they last – which won’t be long 😉

Let me know if you try them!

Since today is Thursday and all, I also wanted to link up with Amanda for some Thinking Out Loud.

Thinking-Out-Loud2

  1. Can anyone else believe today is the last day of 2015? It’s been such an awesome year. I turned 21, got my first “big girl job,” started my senior year in collegeran my first official half marathon, and met Clinton Kelly, among many other things! That said, I can’t wait to see what 2016 brings!

FullSizeRender-67FullSizeRender-1

2. Does anyone have fun plans for the night? I’m going out to dinner and drinks with some friends from high school, and then sleeping over at one of my friends houses. Should be fun!

3. One of my new year’s resolutions is to blog more! I’ve been Instagramming every day for months (which I’m proud of), and I’ve definitely upped my blogging game since getting home, but I’d love to keep it up. It may be hard once I get back to school, but once I graduate, I want to maintain a regular blogging schedule!

4. It finally snowed a couple inches on Tuesday, but it’s not much to get excited about. Plus, since Christmas has already come and gone ( 😦 ), I’m not really wanting the cold or snow. I still can’t get over the weather this fall/early winter. I just hope the winter of 2016 isn’t as brutal as 2015’s (my walk to class pictured below)!

Screen Shot 2015-12-30 at 10.28.28 PM

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Unfortunately, that’s all I’ve got for today because I have a lot to get done before I head out for dinner.
I hope you have a fantastic last day of 2015, a safe night tonight, and a happy, healthy, and amazing start to 2016!
Thanks for reading 🙂
A Little Christmas Recap + Some Links I Love
I hope everyone is having a great weekend and that you had a very merry Christmas if you celebrate!
I had an absolutely amazing Christmas. It was so, so nice to be home with my parents and all three of my older brothers. We haven’t all been home together in quite some time, so there was nothing more I wanted this holiday season than lots of quality fam time.
I feel so happy and blessed that we could all be together because my family is truly the greatest gift. As much as I love the Christmas cheer, music, baking, treats, shopping for presents, coziness, and excitement of the holiday season, my favorite thing about Christmas time is being with my loved ones. There’s seriously nothing better.
FullSizeRender (10)
Clearly not the most recent picture, but it was too cute not to share – haha!
To kick off the holiday weekend, we went to Christmas Eve mass and then had our usual Christmas Eve lasagna dinner (and fun yankee swap) at my aunt’s house, which is a tradition we’ve had for years.
Christmas Day
We woke up at 8:00 on Christmas morning and all sat around our beautiful tree, taking turns opening gifts one at a time (as we do every year).
Even though I don’t like to focus on the material stuff, I’m thinking of doing a “what I got for Christmas” post, just because I know it’s fun to see what people got (at least, I love to find out 🙂 ). We shall see.
Screen Shot 2015-12-27 at 12.11.40 AM
Once all the awesome presents had been opened and lots of laughs were had, we ate breakfast and did our lotto scratch tickets (another tradition we have)!
Then, one of my brothers (who recently moved to Chicago) and I did our “second annual siblings run” since the weather was creepily warm, yet again. We ran the 5k course in the park in my town where we both had our cross-country practices back in high school. It was literally a walk (well, a run) down memory lane. We had the best time!
Once we got home, I did another three miles in my neighborhood because it was just too nice out not to get out there! It was great seeing so many of my neighbors out for Christmas morning walks and we all smiled and wished each other Merry Christmas, which was so nice. I love how the holidays bring everyone closer together.
I was able to stretch and shower just in time for company to start arriving around 1:30. We had a great day full of family time, lots of amazing food (I think I probably ate 10 cookies/chocolates plus pie…and breakfast and dinner…but oh well, no regrets here!), tons of laughter, and so much fun.
IMG_8724
It was an amazing day full of memories I will cherish forever.
Saturday
We had a slow, relaxing Saturday morning, and in the afternoon I went for an 8 mile run before more company came over to celebrate.
Since my parents cooked so much the day before, we just had some easy appetizers and then got pizzas and salads and had leftover desserts (we have so many cookies, golden Oreo truffles (don’t worry, I’ll share the recipe soon!), cakes, Hershey’s Symphony candy bar brownies (pictured above ^), pies, and candies – but, hey, I’m not complaining 😉 ).
It was another awesome day full of joy and festivities.
I’m sad that Christmas is already over this year – it just flies by way too fast! But at least there’s still New Years Eve to look forward to, plus my birthday (!!), and a whole winter break to enjoy :).
I truly hope you had an amazing holiday, and that the good times just keep rolling!
Thursday Thoughts
HAPPY CHRISTMAS EVE!!
Today I’m coming at you with some more Thursday Thoughts and, of course, I’m joining Amanda‘s link-up party!
thinking-out-loud2
It may not come as a surprise that my thoughts today are mostly about – what else – CHRISTMAS!
FullSizeRender (3)
1. I cannot believe tomorrow is Christmas. This year flew by, and it feels like I blinked after Thanksgiving and the next thing I knew it was Christmas! Time just needs to slow down sometimes, am I right?
2. When I was little I couldn’t wait for the actual day to arrive, but now that I’m older, I enjoy the whole holiday season/ build up to Christmas possibly even more than the actual day itself. This is mostly because the day flies by so fast that suddenly it’s all over and it’s back to “normal” life for a whole year, which is kind of sad. Anyone else feel this way?
3. What makes me the saddest is when we have to take down all the decorations. That day = depressing.
photo 1
4. Does it freak anyone else out that this “winter” (aka November and December) has been so mild?
FullSizeRender (6)
5. Speaking of winter, I guess we won’t be having a white Christmas on the east coast!
20140119-213339.jpg
6. This was so painful to watch (it was all over my Facebook newsfeed after the show aired, so, of course, I watched it – and cringed)! There have been some hilarious jokes made since the debacle, and this one made me laugh out loud on Monday!
FullSizeRender (7)
7. It seems like every Christmas break I’m in the mood for some reminiscing, so I always break out the old photos and home videos. These pics aren’t super old, but I had to share. Before running (<- one of my favorite posts!) became a huge part of my life, I danced from when I was 3 to about 14. These pics (sorry the quality sucks, I took them on my phone of a shiny page in a photo album) were taken the night of my last dance recital. Oh, the memories.
8. ‘Tis the season for lots of baking! My mom and I have spent a lot of time listening to Christmas tunes in the kitchen lately, and there’s nowhere I would rather be right now! We tried a new recipe (which we changed up a bit) this past weekend for what we renamed “Spinach Parmesan Bites,” and we loved them! We’ve also made my mom’s famous chocolate chip cookies, and some golden Oreo truffles (I will share pictures/the recipe soon)!
IMG_8658
IMG_8547
9. Ever since I studied abroad in Florence, Italy, I’ve loved a good glass of wine (and yes, I am 21 😉 ). One of my roommates brought this Beaujolais Nouveau from home and we all absolutely loved it. If you like red wine, I highly recommend this one!
IMG_8346
10. If you celebrate, I hope you have an amazing Christmas Eve, Christmas, and weekend with your loved ones. Stay warm and cozy, and enjoy every second!
See you again real soon 🙂
Links I Love
Happy Sunday!
How has your weekend been?! Or, if you’re reading this on Monday, how was your weekend?
Mine has been filled with fun with friends and family, awesome food, some good workouts, and lots of holiday cheer!
Today I’m linking up with the fabulous Amanda to share some of my “Link Love.”
These are some things I’ve found across the web – from fitness articles, to recipes, clothes, career/ blogging/ life tips, and more!
Feel free to share some of your own links in the comments below!
Fitness:
Treadmill Strength Workout via The Hungry Runner Girl – I love breaking up runs with strength circuits, and this is a great one!
12 Habits of Highly Motivated Runners via Runner’s World – I also love laying all my things out the night before (and wearing as much of my workout outfit to bed as possible), so I don’t even need to think in the morning – I can just GO!
12 Days of Fitness Workout via The Fitnessista – A great workout, and since it has a festive title, for some reason I’m super excited and motivated to do it in the days leading up to Christmas (weird, I know).
The Truth About Setting Your Treadmill Incline via Women’s Running – I’ve always set my incline to at least .5 – 1 for steady-state treadmill runs. Now I don’t know if I should keep doing that or put it down to 0? #RunnerProbs
21 Little Lifestyle Changes That Will Help You Get Healthier via BuzzFeed – I love (and already do!) numbers 5, 7, 9, 11, 12, 13 (I want one so badly!), 15, and 17.
Learning to Run Early in the Morning via Runner’s World – I need to get back to doing this again. When I worked 8:30-5 this past summer I was great at getting up at 6 and getting a workout in. Now that I can sleep in since I have afternoon/ evening classes, my “early morning runs” don’t usually start until 10 or 11.
The Best Bodyweight Workouts by Bloggers via Life in Leggings – I love these workouts because you can do them anytime, anywhere with no equipment! They’re particularly great for the holiday season when so many of us are traveling.
Fashion:
Outfits to Recreate via The College Prepster – I’ve always adored Carly‘s style, and these outfits are some of my favorites!
A Very Merry Holiday Prep via Gal Meets Glam – Julia‘s style is a bit more formal (and gorgeous!!) than my everyday wardrobe, but as I get older, I’m finding myself favoring classic pieces more and more, and I’m obsessed with all of her outfits. I love her blog for style and beauty inspiration, and this outfit is one I would definitely wear this holiday season.
Patagonia Better Sweater Fleece Jacket via Saint Bernard – My Patagonia fleece got a massive pen stain on it (I blame finals!) last week that I couldn’t fully get out, so I’m in search for a new one.
Steve Madden Booties via Asos – I finally found little black booties over Thanksgiving break, but now I could really use some brown booties. I love these, but they’re out of stock almost everywhere!
Pale Pink Coat via Nordstrom – I’ve been in search of a nice long coat for a couple years now, and this one is gorgeous!
Stadium-Cloth Cocoon Coat via J.Crew – This one (in camel or gray) may be a little more practical.
LIKEtoKNOW.it via Instagram – I love how all you have to do is like your favorite fashion blogger’s photos, and the items are sent right to your email inbox!
Food:
Friday Favorites (12/18/15)
Happy Friday you guys! Hope you’re all doing well on this fine December day.
I’m in a great mood because I’m finally done with finals and back at home for the holidays!
I can’t believe that fall semester of my senior year in college is already over, and that I only have one semester left… but let’s not talk about that.
I’ll put the sentimental senior-in-college thoughts aside for another day, because right now, it’s time to just sit back, relax, and enjoy Christmas break!
I still owe you a half marathon recap (if you want one?), but today I wanted to link up with Heather to show you some of the things I’ve been loving lately!
  • Finally being done with finals
As I mentioned, after many stress-filled weeks of paper writing, working on group projects, and studying, finals are behind me and I’m home for a month! It always amazes me how fun study days end up being (well parts of them, anyway) due to the cabin fever craziness and endless laughs with my 5 roommates, and I’ll definitely miss all my college friends when I’m home, but man, it feels good to be stress-free for a few weeks.
  • Christmas cheer
If you follow me on Instagram, you may have seen that I went into Boston to see the lights, which was the perfect Saturday outing before finals began. There’s not much that makes me happier than my favorite holiday in my favorite city!
Screen Shot 2015-12-18 at 1.27.40 AM
…And of course, we decorated our apartment (and I never want to take it all down)!
  • Quest bars
These are my favorite protein bars lately, especially with a cup of Target’s Archer Farms coffee. My current fave is Cinnamon Roll, but I also love the Coconut Cashew and Banana Nut Muffin. I’ll eat them as is, or I’ll break them into pieces and microwave them for ~25 seconds. Paired with a banana or apple, they’re the perfect post-workout breakfast (or snack)!
  • 30-minute running workouts
While I love a good long run (which is what I consider anything above 6 miles) once or twice a week, as well as comfortable steady-state runs (what I do most days, paired with a short core, arms, or full-body circuit), I like to mix it up every now and then and do some speed intervals.
Screen Shot 2015-12-18 at 1.54.42 AM.png
  • Oreo truffles
One of my roommates made these last week and, I swear, they’re seriously what helped us all survive finals (as did these Nutella stuffed blondies…). The best part? They’re super simple to make and taste incredible. You can follow Cait’s recipe, or you can just Google “Oreo truffles” and a million will come up that are all basically the same easy recipe. Plus, you can get creative by experimenting with different flavors of Oreos, different types of chocolate, different toppings, and more! I’m thinking I may try golden Oreos with melted caramel or butterscotch chips… Yum.
  • Winter workout clothes
Not that it’s been very cold out yet (so weird…), but there have been a couple mornings in the mid-30’s, which meant it was time to break out the winter running apparel! Plus, let’s be real, I’m in workout clothes most days, so these are some items I’ve been wearing all the time lately.
I love this Gap top with thumb holes and these Target half-tights (plus, of course, my Brooks Ghost 7’s)!
Screen Shot 2015-12-18 at 2.13.19 AM
These Under Armour leggings are so comfortable and warm – I have them in a couple colors!
Screen Shot 2015-12-18 at 2.15.38 AM
I’m obsessed with my new Under Armour turtleneck shirt with thumb holes (and mittens) – it’s perfect for super cold, windy days!
Screen Shot 2015-12-18 at 2.21.57 AM.png
I shipped my new Fabletics outfits to my house while I was away at school, so I was so excited to come home at Thanksgiving to the Salar capri leggings and the Ayni sports bra!
Screen Shot 2015-12-18 at 2.17.13 AM
When I got home on Wednesday, the Switch Back Tee II had arrived, and I’m in love! I don’t think I’ll wear it to workout, but I’ll definitely be wearing it all the time with a colorful sports bra or tank top!
  • Coldplay’s new album
I’ve always been a huge Coldplay fan, so naturally my Spotify has been A Head Full of Dreams on repeat for the past few weeks! I especially love the songs “Up&Up” and “Everglow.”
  • Georgie’s E-Book
I’m a longtime reader of the fabulous Georgie‘s blog, and I absolutely love to see all her awesome shenanigans on Instagram, so when I saw she created an E-book, I bought it right away. It’s filled with the best tips for taking your Instagram photography to the next level, which is one of my (many) goals to work on over my holiday break.
Alright, that’s all for today!
I hope I didn’t bore you with all my current faves! I have tons of other links, foods, clothes, products, music, and more that I’ve been loving lately, but I’ll save those for another time.
I hope you have a fabulous weekend filled with relaxation, good company, yummy eats, lots of laughs, and tons of holiday cheer!
Catch ya later!
What I’ve Been Eating Lately
Well hello my long lost friends!
Today I’m coming at you with a sentence-per-picture ‘what I ate’ thinking out loud post about…well what I’ve eaten lately! I know it’s been ages and we have a lot to catch up on (and I need to post my half marathon recap!!), but I wanted to join Amanda’s party today, so here we are.
Thinking-Out-Loud2
I’ll be back once this crazy semester is over in LESS THAN ONE WEEK!!!
In the meantime, Happy weekend, and HAPPY HOLIDAY SEASON!
(Kind of) Recent Eats:
(All of these photos are from my Instagram, @LaurRuns!)
My favorite Surf City Squeeze Blueberry Spinach Cucumber smoothie. So refreshing.
I miss tailgating! This was only a fraction of our spread for Parents Weekend. Man, that was a blast. I’m serious – the older I get, the more I realize how much parents rock.
I’m obsessed with Fall flavors. This Chobani was way too good.
Speaking of Fall flavors… Sometimes, you just need the real thing.
Thanksgiving 2015 was a success. The pie was my favorite part, so of course I failed to snap a photo.
Turkey wraps get me through long days of paper writing and studying.
Just kidding, these are what get me through. I think I found the meaning of life inside this blondie. It’s called Nutella.
In case you haven’t noticed…
Hello strangers!
Once again, it’s been way too long since my last post.
I’m swamped with papers, studying for midterms, applying to jobs, and enjoying senior year festivities, but this long weekend I came home to run a half marathon!
FullSizeRender-1
I’m hoping to write a full race recap sooner rather than later, so be on the lookout for that!
I haven’t posted in ages, but I haven’t forgotten about blogging. In fact, I’ve been Instagramming daily for the last couple months, and I have tons of blog post ideas for the (hopefully near) future.
And in case you didn’t notice… I have done something for the little old blog recently…
I changed the name, changed the layout, and created new social media handles!
FullSizeRender 2
I’ve been contemplating new blog names for over a year now, and one finally came to me just after I finished my half marathon yesterday.
As I explained on Instagram, if you know me, you know I’ve loved to run since 8th grade.
Screen Shot 2014-07-17 at 1.28.08 AM
I love to run on the trails, the roads, the treadmill, and to the finish line.
FullSizeRender-6 FullSizeRender-11
I love to run to the mall to browse, shop, and get fashion inspiration.
FullSizeRender-9 FullSizeRender-5 FullSizeRender-4 FullSizeRender-2
And I pretty much sprint to the table to fuel, refuel, and enjoy meals with family and friends.
Screen Shot 2015-01-07 at 12.10.05 AM FullSizeRender-8 FullSizeRender-10 FullSizeRender
It’s seems like I’m always running to something, so when this name popped into my head, I felt like it was perfect for me!
Now I just need to find the time to start blogging again. I’ve got tons of ideas…
Fitness: running, half marathon training, racing, workouts, fitness fashion, etc.
Food: recipes, restaurant reviews, nutrition tips, etc.
Fashion: styling, favorites, inspiration, etc.
Travel: European adventure recaps, etc.
Family, friends, and fun (including surveys, and more!)
…So please stick around!
FullSizeRender-12 FullSizeRender-2
I can’t wait to talk to you again soon.
Have a happy week 🙂
Healthy Grocery Haul!
Hi guys!
It’s been ages since my last “Thursday Thoughts” post, and since it is Thursday and all, I thought it would be perfect to link up to Amanda’s “Thinking Out Loud” party again!
Thinking-Out-Loud2
This time, my thoughts actually are out loud, since I’ve decided to upload yet another video. I figured this is a quicker way to get some content on my blog, without having to write up a super long post (as you all know I like to do…).
I was planning to publish this video next week for a What I Ate Wednesday post since it’s all about the healthy foods I love to eat, but I just couldn’t resist putting it up a bit early 🙂
If you have any questions or suggestions for future posts or videos, just leave them in the comments below! Oh, and feel free to subscribe to my “channel” (if I can even call it that). There’s not much to it yet, but I plan to build it up along with my blog! I have a busy semester right now, but as soon as summer comes, I should have more time to dedicate to this passion of mine.
That’s all for now – I’m off to continue studying for midterms (joy!). Have a great rest of the week!
PS – I’m still contemplating my blog name… “Fueling A Life” is kind of losing its touch for me (which is why my Instagram and Twitter are @FuelingFab). Let me know how you feel about “Fueling Fab”, or “Ooh La Laur”, or any other thoughts and ideas you might have for my blog/channel name! Thanks so much 🙂
